Sour Cream Chicken Enchiladas

Ingredients:

  1. 16 ounces - Sour Cream
  2. 2 tablespoons - Onions chopped
  3. 2 cups - Cooked Chicken Breast cut up
  4. 1 cans - Cream of Chicken
  5. 2 1/2 cups - Monterey Jack Cheese grated
  6. 2 1/2 -
  7. cups - Longhorn Cheese grated
  8. 1 packages - Flour Tortillas (12 count) soften
  9. 4 ounces - Chopped Green Chilies
  10. - salt to taste
  11. - pepper to taste

Directions:

Mix sour cream, soup, onion, 1 cup of each cheese and chilies in medium sauce pan. cook until it bubbles and cheese is melted. Add 1 cup sauce mix to chicken and stir. Soften tortillas, put 2 Tbps. of chicken mix in them, roll them up and place in a 13x9x2 inch baking dish. Top with the rest of the sauce and cheese. Bake 350 for 20 to 30 minutes or until cheese is melted.
