Sole with Crunchy Vegetables

Ingredients:

  1. 1 stalks - celery (about 3/4 cup) finely chopped
  2. 3 - green onions (about 1/3 cup) finely chopped
  3. 1/4 teaspoons - salt
  4. 1 tablespoons - lemon juice
  5. 2 tablespoons - margarine or butter
  6. 1 packages - 12 oz. Gorton's Fishmarket Fresh frozen sole fillets
  7. 1/4 teaspoons - salt
  8. 1/8 teaspoons - pepper
  9. 1/8 teaspoons - paprika
  10. 1 - medium carrot (about 1/2 cup) shredded

Directions:

Heat oven to 350° F. Arrange frozen fillets in ungreased square baking dish, 8-x-8-x-2-inches.

Sprinkle with salt, pepper and paprika. Spoon carrot, celery and green onions onto fillets; sprinkle with a little more salt and the lemon juice.

Dot with margarine. Cover and bake until fillets flake easily with fork, about 30 minutes.
