Sole in Peppercorn Wine Sauce

Ingredients:

  1. 1 cups - dry white wine
  2. 2 tablespoons - green peppercorns
  3. 2 teaspoons - all-purpose flour
  4. 1 tablespoons - butter
  5. 1/2 cups - green onion sliced
  6. 1 1/4 pounds - sole fillet

Directions:

In a large skillet, heat butter over medium-high heat until hot. Add green onions and saute 2-3 minutes or until tender.

Add sole, 3/4 cup white wine, green peppercorns and cover; cook 3-4 minutes or until fish is cooked through.

Remove sole to serving plate and keep warm.

Mix flour and remaining wine together and pour liquid into skillet. Heat to boiling, stirring constantly, until thickened.

Pour sauce over fish and place under broiler until lightly browned.
