Smoken Mozzarella Sandwiches with Lemony Olives

  1. 1 tablespoons - Lemon zest Finely minced
  2. 2 tablespoons - Fresh lemon juice
  3. 4 tablespoons - Extra virgin olive oil
  4. 1 cups - Mixed green and black olives Pitted and coarsely chopped
  5. 1/4 teaspoons - Freshly ground black pepper
  6. 5 whole - Crusty sandwich rolls
  7. 4 ounces - 4 to 5 oz. Smoked mozzarella cheese Very thinly sliced
  8. 10 whole - Basil leaves


1. Combine the lemon zest, juice and olive oil in a small jar, close and shake to combine.
2. Put the olives in a bowl and toss w/ 1/2 of the dressing. Season w/ pepper.
3. Cut the rolls in half and take out a little of the crumb to form shallow hollows. Spread the olives on the bottom halves. Layer the sliced mozzarella over the olives and lay 2 basil leaves on each sandwich. Drizzle the insie of the tops of the rolls w/ the remaining lemon dressing. Replace the tops, pressing down lightly.
4. Cut in halves and serve.
