Ingredients:
- 1/2 pounds - smoked salmon
- 1/2 pounds - cream cheese room temp
- 1 1/2 tablespoons - fresh lemon juice
- 1 cups - light sour cream
- 1/8 teaspoons - cayenne
- 3 tablespoons - capers divided
- 1/4 cups - green onions minced
Directions:
1. In a food processor, process the salmon, for 8 seconds;
2. Add cream cheese, lemon juice, sour cream and cayenne; process again until mixture is smooth;
3. Transfer to a bowl and stir in 2 Tbl. capers and the green onions.
4. Chill 4 hours or overnight.
5. As an hors d’oeuvres, dollop spread on radicchio/endive leaves; or spoon
mousse on a large platter and surround with small rye bread or cucumber
slices.
