500 g boneless chicken (thigh or breast), cut into bite-sized pieces 2 tbsp butter (or ghee) 2 tbsp cooking oil 1 large onion, finely chopped 2–3 garlic cloves, minced 1 inch ginger, grated 1 cup tomato puree (or crushed tomatoes) ½ cup fresh cream / heavy cream (or coconut cream for richer version) 1 tsp garam masala 1 tsp ground cumin 1 tsp ground coriander ½ tsp turmeric powder ½ tsp red chili powder (adjust to taste) Salt, to taste Fresh coriander (cilantro), chopped — for garnish

Directions:
1. Marinate chicken (optional)
Mix chicken with salt, chilli, turmeric; rest 20 mins.
2. Sauté aromatics
Heat oil + butter → add onions → golden → add ginger-garlic.
3. Cook tomato base
Add tomato puree → cook until oil separates → add all spices.
4. Add chicken
Mix well → cover → cook 10–12 min.
5. Add cream & smoke
Stir cream → simmer.
Heat charcoal → keep in a small bowl inside curry → add ghee → cover 2 minutes.
6. Serve
Garnish with coriander → pair with naan or rice.
