Ingredients:
- 1/2 pieces - Lg Red Onion Diced
- 1 cups - Bread Crumbs
- 2 tablespoons - Montreal Steak Spice
- 1 tablespoons - Black Pepper
- 2 tablespoons - Italian Seasoning
- 2 tablespoons - Minced Garlic
- 350 grams - Mild Cheddar Cut into Small Cubes
- 1 cups - Texas Bold BBQ Sauce
- 1 tablespoons - Brown Sugar
- 2 tablespoons - French's Deli Mustard
- 1/2 - Beer
- 350 grams - Mild Cheddar Grated
- 20 pieces - Brioche Buns
- 1 cups - Butter
- 3 cups - Apple Wood Chips Soaked in water for 30 minutes
- 2 whole - Apples cut into 1/4's
- 2 1/2 kilograms - Ground Beef
- 1/2 kilograms - Thick Cut Bacon Cooked 90%
- 4 pieces - XL Eggs
- 1 cups - Texas Bold BBQ Sauce
Directions:
Cook Bacon to 90% (still flexible)
Cut Mild Cheddar into small cubes
Mix Beef, eggs, BBQ sauce, Red Onion, Bread Crumbs, spices and garlic together and pat into Baseball sized Flat Patties.
Wrap a cube of mild cheddar with 1/2 piece of cooked bacon and press into patty. Mold the patty around cheese and bacon and make into meatball covering cheese and bacon.
Place directly on grill in smoker at 225°F and smoke with 1.5 cups apple wood chips with four 1/4 apple slices for 1/2 hour.
Mix 2nd cup of BBQ Sauce, brown sugar, mustard and beer together and brush over meatballs after the first 1/2 hour.
Add another 1.5 cups of wood chips and the remaiing apple slices and smoke for another 20 - 30 minutes until an internal temperature of 160°F
Brush each Meatball again with the BBQ sauce mixture and top with grated marble cheese.
Grill buttered Brioche buns on grill or BBQ.
After Cheese is melted 6-10 minutes remove from smoker and place and bun and dress with condiments and toppings as desired.
