Ingredients:
- 3 cups - sugar
- 1 cups - oil
- 4 - eggs
- 1 teaspoons - finely grated lemon rind
- 2 1/2 cups - canned pumpkin
- 1/4 cups - Smirnoff vodka
- 3 1/2 cups - sifted flour
- 3/4 teaspoons - salt
- 2 teaspoons - baking soda
- 3/4 teaspoons - nutmeg
- 1 teaspoons - cinnamon
- 1 teaspoons - ground cloves
- 1/2 teaspoons - allspice
- 1 cups - chopped pecans
Directions:
Combine sugar and oil. Beat in eggs, one at a time. Mix in lemon rind, pumpkin and vodka.
Sift all dry ingredients. Stir into pumpkin mixture. Fold in nuts.
Pour into two well-greased 9"x5"x3" loaf pans. Bake in preheated 350 degree F oven for 1 hour, 10 minutes.
Cool 10 minutes before removing from pans. Cool completely on cooling racks.
