Smashed Butternut Squash

  1. 1 - Butternut Squash
  2. 4 tablespoons - butter
  3. 1/3 cups - brown sugar
  4. 1 teaspoons - cinnamon


Cut butternut squash in half lengthwise and scoop out the seeds. Place in microwave-safe dish (cut-side down). Add 1/2" water. Microwave (uncovered) on high for 12-15 minutes until soft.
Scoop out the flesh and place in a bowl. Mash with a spoon or fork until smooth.
Add butter, brown sugar, and cinnamon. Mix until combined.
