Ingredients:
- 1 - beef flank steak about 1 pound
- 1 - medium onion cut into strips
- 1/2 cups - medium salsa
- 2 tablespoons - chopped fresh cilantro optional
- 2 tablespoons - fresh lime juice
- 2 cloves - garlic minced (or more)
- 1 tablespoons - chili powder
- 1 teaspoons - ground cumin
- 1/2 teaspoons - salt
- 1 - small green bell pepper cut into strips
- 1 - small red bell pepper cut into strips
- - flour tortillas warmed
- - additional salsa, cheese, sour cream, green onions, etc. additional toppings
Directions:
Cut flank steak lengthwise in half, then crosswise into strips; place meat in slow cooker.
Combine onion, salsa, cilantro, lime juice, garlic, chili powder, cumin and salt and add to slow cooker.
Cover; cook on LOW 5-6 hours.
Add bell pepper strips; cover; cook an additional 1 hour on LOW.
Serve with flour tortillas and additional toppings, as desired.
