Slow-Cooker Steak Fajitas

Ingredients:

  1. 1 - beef flank steak about 1 pound
  2. 1 - medium onion cut into strips
  3. 1/2 cups - medium salsa
  4. 2 tablespoons - chopped fresh cilantro optional
  5. 2 tablespoons - fresh lime juice
  6. 2 cloves - garlic minced (or more)
  7. 1 tablespoons - chili powder
  8. 1 teaspoons - ground cumin
  9. 1/2 teaspoons - salt
  10. 1 - small green bell pepper cut into strips
  11. 1 - small red bell pepper cut into strips
  12. - flour tortillas warmed
  13. - additional salsa, cheese, sour cream, green onions, etc. additional toppings

Directions:

Cut flank steak lengthwise in half, then crosswise into strips; place meat in slow cooker.
Combine onion, salsa, cilantro, lime juice, garlic, chili powder, cumin and salt and add to slow cooker.
Cover; cook on LOW 5-6 hours.
Add bell pepper strips; cover; cook an additional 1 hour on LOW.
Serve with flour tortillas and additional toppings, as desired.
