Slow Cooker Ham and Potato Soup

Ingredients:

  1. 8 cups - russet potatoes diced
  2. 1 - yellow onion diced
  3. 2 - large carrots peeled and chopped
  4. 1/2 cups - chopped celery
  5. 16 ounces - cubed ham
  6. 1/4 teaspoons - salt
  7. 1/4 teaspoons - fresh cracked black pepper
  8. 1/4 cups - flour
  9. 4 cups - chicken broth
  10. 1 1/2 cups - milk
  11. 1/2 cups - sour cream

Directions:

Add the potatoes, onion, carrot, celery, ham, salt, pepper, and chicken broth to your slow cooker and cook on low heat for 7-8 hours or on high heat for 4-5 hours.

Using a potato masher, mash about ⅓ of the potatoes.

Add the flour, milk and sour cream and stir everything together.

Cover and cook on high for an additional 15 minutes.
