Slow Cooker Curry

Ingredients:

  1. 2 teaspoons - garlic minced
  2. 1 pieces - ginger 1-inch, grated
  3. 2 tablespoons - red wine vinegar
  4. 1 1/2 teaspoons - curry powder
  5. 1 tablespoons - water
  6. 1 teaspoons - cumin
  7. 1 teaspoons - salt
  8. 1/2 teaspoons - black pepper
  9. 1 1/2 pounds - boneless, skinless chicken thighs
  10. 2 cups - cooked long-grain white rice
  11. 3 - plum tomatoes diced
  12. - cilantro to taste

Directions:

In slow cooker, combine garlic, ginger, red wine vinegar, curry powder, water, cumin, salt and pepper. Add chicken thighs; toss to coat well. Cook for 7 hours on low.
Add cooked rice, plum tomatoes, and cilantro, and serve.
