Ingredients:
- 2 teaspoons - garlic minced
- 1 pieces - ginger 1-inch, grated
- 2 tablespoons - red wine vinegar
- 1 1/2 teaspoons - curry powder
- 1 tablespoons - water
- 1 teaspoons - cumin
- 1 teaspoons - salt
- 1/2 teaspoons - black pepper
- 1 1/2 pounds - boneless, skinless chicken thighs
- 2 cups - cooked long-grain white rice
- 3 - plum tomatoes diced
- - cilantro to taste
Directions:
In slow cooker, combine garlic, ginger, red wine vinegar, curry powder, water, cumin, salt and pepper. Add chicken thighs; toss to coat well. Cook for 7 hours on low.
Add cooked rice, plum tomatoes, and cilantro, and serve.
