Add some red pepper flakes if you want a spicier dish. Leftovers reheat well and freeze well.

Ingredients:
- 2 cups - Dried Lentils Sorted/washed/drained
- 1 - Large Onion Chopped
- 1 - Carrot Chopped
- 1 - Green Pepper Chopped
- 4 cups - Water
- 2 cans - Tomato Sauce
- 1 tablespoons - Dried Parsley Flakes
- 1 - Bay Leaf
- teaspoons - Basil
- 1/2 teaspoons - Garlic Powder
- 2 teaspoons - Braggs Liquid Aminos
- 1 tablespoons - Avocado or Olive Oil
Directions:
Sauté onions, green peppers and carrots in oil til softened (about 5 minutes) then add the water and lentils, bring to a boil then turn the heat down to simmer, cover the pot and let it cook for 30 minutes. Add the tomato sauce and seasonings and simmer covered for another 30 minutes. Serve as desired over rice, quinoa, pasta or breads.
