Ingredients:

  1. 1 - avocado peeled, pitted
  2. - cucumber chopped
  3. 1/2 - red pepper deseeded, chopped
  4. - juice of a lime to taste
  5. 1/4 teaspoons - salt
  6. 1/8 teaspoons - chili powder
  7. - other seasonings to taste
  8. - yellow bell pepper wedges for serving with

Directions:

Coarsely mash peeled and pitted avocado in a bowl.

Chop cucumber in small pieces and add 1/2 to avocado mixture.

Deseed and chop 1/2 red pepper in small pieces; add to mixture.

Add lime juice, salt, chili powder and any other desired seasonings, and mix well.

Serve with yellow bell pepper wedges.
