Ingredients:
- 1 1/2 pinchs - cayenne
- 1 1/2 pinchs - garlic powder
- 1 1/2 pinchs - Tony's Cajun seasoning
- 1 1/2 pinchs - black pepper
- 1 1/2 pinchs - berbere (Ethiopian spice) optional
- 1 1/2 pinchs - beef flavored bouillon powder
- - Beef
- 3 - or 4 fresh bell peppers (Or frozen pepper stir-fry)
- 1 - red onion chopped
- 6 cloves - to 8 cloves garlic (OR 2 Tbsp minced garlic)
- 2 - cinnamon sticks
- 1 cans - petite diced tomatoes (with jalapeno, if available)
- 1 tablespoons - kitchen bouquet browning sauce
- 1 cups - water
- 1 - bushel of kale
- 1 - bushel of collard greens
- 1 - frozen bag of greens optional
- - rice (cooked with saffron, if desired) for serving with
Directions:
Beef:
1. Season beef with all seasonings and paste and let marinade overnight if possible (the longer the better).
2. In olive oil, saute half of peppers, onions and garlic until aromatic.
3. Add meat mixture and saute until brown. Add canned diced tomatoes, water, cinnamon sticks and kitchen bouquet.
4. Transfer to a crockpot and keep on low heat while you prepare greens.
Greens:
1. In olive oil, saute other half of peppers, onion and garlic until aromatic.
2. Start adding greens one handful at a time slowly until all greens cook down and are in the pot.
3. Then transfer greens mixture to the crockpot and mix into the meat mixture.
4. Serve hot over cooked rice.
