Ingredients:
- 12 ounces - uncooked ziti pasta
- 1 tablespoons - olive oil
- 1 pounds - andouille sausage (I use turkey sausage) cut into 1/2-inch slices
- 1/2 - small red bell pepper chopped
- 1/2 - small green or yellow bell pepper chopped
- 1/2 cups - chopped sweet onion
- 2 teaspoons - minced garlic
- 1 cans - 15 oz. fire-roasted diced tomatoes (OR Italian diced tomatoes)
- 1 cans - tomato sauce (15 oz.)
- - salt and pepper to taste
- 3/4 cups - Parmesan cheese shredded
- 1 cups - mozzarella cheese shredded
- - basil leaves optional, for topping
Directions:
Preheat oven to 350 degrees F. Cook pasta according to package directions, but only boil for 8 minutes.
In an oven-proof skillet, cook sausage, peppers, onion and garlic in hot oil (and a little butter) over medium-high heat, stirring often, until vegetables are tender and sausage has browned slightly, about 7 to 8 minutes.
Stir in tomatoes, tomato sauce, salt and pepper. Bring to a simmer over medium heat, then add 1/2 cup of Parmesan, stirring until melted. Stir in the cooked pasta.
Remove from heat, sprinkle with mozzarella and remaining Parmesan. Bake in preheated oven until mixture is bubbly and cheese is lightly browned, about 20 minutes.
Allow to stand about 10 minutes before serving. Garnish with basil leaves as desired.
