Skillet Teriyaki Chicken with Pineapple

Ingredients:

  1. 1 tablespoons - olive oil
  2. 1 pounds - boneless, skinless chicken tenderloins or breasts cut into 1-inch pieces
  3. - salt and pepper
  4. 2 cloves - garlic minced
  5. 2 cups - broccoli florets
  6. 1 - red bell pepper stem and seeds removed, diced
  7. 2 cups - fresh pineapple cubed
  8. - sesame seeds optional garnish
  9. - cooked brown rice optional, for serving with
  10. 1/4 cups - low sodium soy sauce
  11. 1/4 cups - pineapple juice
  12. 1 teaspoons - sesame oil (Or olive oil)
  13. 3 tablespoons - honey
  14. 2 teaspoons - fresh grated ginger

Directions:

Heat a skillet over medium heat, add olive oil and chicken pieces. Season chicken with salt and pepper and cook until lightly browned, 4 or 5 minutes. Add garlic and saute for about a minute, mixing with the chicken.

Add broccoli, pineapple and bell pepper to skillet; cook for 5 more minutes or until vegetables are tender and chicken is cooked through.

For the sauce: In a small bowl, whisk together pineapple juice, oil, soy sauce, honey and ginger; add sauce to skillet, reduce heat slightly, and bring to a simmer.

Serve sprinkled with sesame seeds and enjoy.
