Ingredients:
- 1 tablespoons - olive oil
- 1 pounds - boneless, skinless chicken tenderloins or breasts cut into 1-inch pieces
- - salt and pepper
- 2 cloves - garlic minced
- 2 cups - broccoli florets
- 1 - red bell pepper stem and seeds removed, diced
- 2 cups - fresh pineapple cubed
- - sesame seeds optional garnish
- - cooked brown rice optional, for serving with
- 1/4 cups - low sodium soy sauce
- 1/4 cups - pineapple juice
- 1 teaspoons - sesame oil (Or olive oil)
- 3 tablespoons - honey
- 2 teaspoons - fresh grated ginger
Directions:
Heat a skillet over medium heat, add olive oil and chicken pieces. Season chicken with salt and pepper and cook until lightly browned, 4 or 5 minutes. Add garlic and saute for about a minute, mixing with the chicken.
Add broccoli, pineapple and bell pepper to skillet; cook for 5 more minutes or until vegetables are tender and chicken is cooked through.
For the sauce: In a small bowl, whisk together pineapple juice, oil, soy sauce, honey and ginger; add sauce to skillet, reduce heat slightly, and bring to a simmer.
Serve sprinkled with sesame seeds and enjoy.
