    Reduce amount of oil for a slimmer choice. This may also be cooked in a skillet on top of the stove. It pairs beautifully with a clean, crisp Sauvignon Blanc.

  1. 1 pounds - raw shrimp peeled, deveined
  2. 1/2 cups - extra virgin olive oil
  3. 5 cloves - garlic minced
  4. 2 tablespoons - fresh lemon juice
  5. 1/2 cups - fat-free Swanson chicken broth
  6. 3 tablespoons - fresh parsley chopped
  7. - salt and pepper to taste
  8. - hot cooked linguine


Heat olive oil in a 9-x-13-inch glass baking dish in a 400° F oven.

Stir in shrimp, garlic, lemon juice and chicken broth; return to oven for 3 minutes.

Remove from oven and mix in parsley. Continue baking until shrimp are opaque, about two minutes longer.

Season to taste with salt and pepper and serve over hot linguini.
