Reduce amount of oil for a slimmer choice. This may also be cooked in a skillet on top of the stove. It pairs beautifully with a clean, crisp Sauvignon Blanc.

Ingredients:
- 1 pounds - raw shrimp peeled, deveined
- 1/2 cups - extra virgin olive oil
- 5 cloves - garlic minced
- 2 tablespoons - fresh lemon juice
- 1/2 cups - fat-free Swanson chicken broth
- 3 tablespoons - fresh parsley chopped
- - salt and pepper to taste
- - hot cooked linguine
Directions:
Heat olive oil in a 9-x-13-inch glass baking dish in a 400° F oven.
Stir in shrimp, garlic, lemon juice and chicken broth; return to oven for 3 minutes.
Remove from oven and mix in parsley. Continue baking until shrimp are opaque, about two minutes longer.
Season to taste with salt and pepper and serve over hot linguini.
