Ingredients:
- 1/2 cups - unsalted butter
- 2 tablespoons - olive oil
- 4 cups - sliced onions
- 4 cans - beef broth, 10.5 oz. each can
- 1 teaspoons - dried thyme
- - salt and pepper to taste
- 4 slices - French bread
- 4 slices - provolone cheese
- 2 slices - Swiss cheese diced
- 1/4 cups - grated Parmesan cheese
Directions:
1. Melt butter with olive oil in a large stock pot over medium heat. Add onions and continually stir until tender and translucent and moderately browned.
2. Add beef broth and thyme; season with salt and pepper and allow to simmer over medium-low heat for 30 minutes.
3. Heat the oven broiler.
4. Ladle soup into oven-safe serving bowls and place one slice of bread atop of each (bread can be broken into pieces, if you prefer). Layer each slice of bread with one slice of provolone and 1/2 a slice of diced Swiss cheese along with 1 tablespoon of the Parmesan cheese.
5. Place bowls on a cookie sheet and broil in the preheated oven until cheese bubbles and browns slightly.
