Shrimp Veracruz

Ingredients:

  1. 1/4 cups - olive oil
  2. 2 - jalapeno chilies seeded, minced
  3. 2 tablespoons - minced garlic
  4. 1 teaspoons - minced peeled fresh ginger
  5. 20 - uncooked large shrimp peeled, deveined, tails left on
  6. 1 cups - dry sherry
  7. 1/2 cups - chilled butter (1 stick) cut in pieces
  8. 1 tablespoons - chopped fresh cilantro
  9. 1 tablespoons - chopped fresh chives
  10. - cooked rice for serving with

Directions:

Saute jalapenos, garlic and ginger for 1 minute; add shrimp and cook until pink.

Add sherry and bring to a boil. Reserve.

Whisk in butter slowly. Mix in cilantro. Serve warm over rice.
