Shrimp Chowder

Ingredients:

  1. 1/2 cups - chopped onion, celery, carrot, and sweet red pepper
  2. 1/4 cups - butter, cubed
  3. 1/4 cups - flour
  4. 2 cups - 2 percent milk
  5. 1/2 pounds - cooked shrimp, peeled and deveined
  6. 1 cans - dice potatoes, 14.5 oz can or use fresh
  7. 1 cups - vegetable broth
  8. 1 cups - frozen corn
  9. 2 teaspoons - seafood seasoning
  10. 1/2 teaspoons - dried thyme

Directions:

In a large saucepan, saute the onion, celery, carrot, and red pepper in butter for 5 mins. or until tender. Stir in flour until blended. Gradually add milk. Bring to a boil. Cook and stir for 2 mins. or until thickened. Add the shrimp, potatoes, broth, corn, seafood seasoning and thyme. Reduce heat and simmer for 10 mins. until heated through.
