Ingredients:
- 1 pounds - large plum tomatoes coarsely chopped, about 2 cups
- 1/4 cups - packed fresh basil leaves thinly sliced
- 1 tablespoons - balsamic vinegar
- 1 tablespoons - oil preferably olive oil
- 1 cloves - garlic minced
- 1 teaspoons - salt
- 1/4 teaspoons - pepper
- 12 ounces - pasta preferably fusilli
- 1 1/2 pounds - medium shrimp peeled and deveined
Directions:
Bring a large pot of water to boil.
Meanwhile, in a bowl combine the tomatoes, basil, vinegar, oil, garlic, salt and pepper; set aside.
Cook pasta in boiling water according to package directions, adding shrimp 3 minutes before end of cooking time; drain.
In a serving bowl, combine pasta mixture with reserved tomato mixture.
