Shrimp and Pasta with Tomato Salsa Cruda

  1. 1 pounds - large plum tomatoes coarsely chopped, about 2 cups
  2. 1/4 cups - packed fresh basil leaves thinly sliced
  3. 1 tablespoons - balsamic vinegar
  4. 1 tablespoons - oil preferably olive oil
  5. 1 cloves - garlic minced
  6. 1 teaspoons - salt
  7. 1/4 teaspoons - pepper
  8. 12 ounces - pasta preferably fusilli
  9. 1 1/2 pounds - medium shrimp peeled and deveined


Bring a large pot of water to boil.

Meanwhile, in a bowl combine the tomatoes, basil, vinegar, oil, garlic, salt and pepper; set aside.

Cook pasta in boiling water according to package directions, adding shrimp 3 minutes before end of cooking time; drain.

In a serving bowl, combine pasta mixture with reserved tomato mixture.
