Shoepeg Corn Casserole

Ingredients:

  1. 3 packages - 8-oz. cream cheese
  2. 3/4 cups - Milk
  3. 3/4 teaspoons - Garlic salt
  4. 3 whole - Large pickled jalapenos Rinsed, seeded & minced freely
  5. 1 whole - Large yellow sweet onion Finely chopped
  6. 6 cans - 11-0r 12-0z. each can shoepeg corn Drained
  7. 3/4 cups - Butter Melted, divided use
  8. 1 - Sleeve Ritz crackers Finely crushed

Directions:

1. Heat oven to 350.
2. Soften cream cheese and milk in microwave. Put in large bowl and stir in garlic salt, jalapenos, onion and corn.
3. Combine half of the melted butter with crushed crackers in skillet and brown the crackers.
4. Stir in remaining butter into corn mixture.
5. Put corn mixture into 3-qt. casserole and top with the browned Ritz crackers. Bake until bubbly, about 25-35 min.
