    If you don't have celery powder add diced celery (about 1 cup) to the mix when sautéing the onions and mushrooms.

Ingredients:

  1. 2 cups - White Beans Cooked with seaweed
  2. 2 cups - Water
  3. 4 - Large fresh shiitake mushrooms Stems removed
  4. 2 tablespoons - Avocado Oil
  5. 1 - Small yellow onion Diced
  6. 1 - Red potato Diced
  7. 1 cups - frozen corn
  8. 1/2 teaspoons - Celery powder
  9. - Salt & Pepper to taste
  10. - Fresh Thyme leaves Optional
  11. - Sliced green onion For garnish
  12. 1 - Carrot Diced

Directions:

Purée cooked beans along with their juices in a high-powered blender. Sauté diced onions and diced shiitake mushrooms in the avocado oil till the onion is soft. At the diced potatoes and diced carrots and sauté a few more minutes then deglaze pan with the water. Cook over low heat till potatoes and carrots are soft. Add the puréed beans, the corn, thyme, celery powder, salt and pepper. Continue cooking to warm through. Serve topped with sliced green onion if desired.
