Ingredients:
- 2 heads - roasted garlic
- 3 tablespoons - red wine vinegar or sherry vinegar
- 1 - shallot finely chopped
- 2 teaspoons - Dijon
- 3 tablespoons - olive oil
- - salt
- - pepper

Directions:
1. Soak shallot in water for 30 minutes and drain.
2. Squeeze roasted garlic out and mix all together in blender.
3. Use for potato salad or arugula salad.
