    This is a great recipe to make from leftovers -- I have taken leftover roast, shredded it and used that instead of ground beef. If you don't have mashed potatotes on hand after dinner or just to whip this up, use boxed mashed potatoes, or you can line the BOTTOM of the baking dish with tater tots (but grease the pan well if using tater tots). I have, on occasion, lined the pan with tater tots and topped with mashed potatoes when I was low on mashed potatoes; my kids were thrilled! This is easy to mix up and keep in fridge for a few days before you bake (be sure to extend baking time then by 15-20 minutes or so for heating through) on a crazy busy week as well.

Ingredients:

  1. 1 pounds - ground beef cooked until brown
  2. 1 cans - cream of mushroom soup family-size
  3. 1 cans - green beans
  4. - mashed potatoes to cover
  5. 1/2 cups - cheddar cheese grated

Directions:

Mix together cooked ground beef with cream of mushroom soup and green beans (or if doubling the recipe -- use both corn and green beans); mix until it resembles a soupy consistency. Pour into an oven-safe baking dish.
Top with mashed potatoes.
Bake at 350 degrees until bubbly (about 45 minutes); top with shredded cheddar cheese, and return to oven to bake for about 5 minutes longer or until cheese is melted.
