Ingredients:
- 2 bunches - trimmed broccoli rabe
- 2 tablespoons - olive oil
- 1 teaspoons - dried oregano
- 3/4 teaspoons - salt
- 1/4 teaspoons - crushed red pepper
- 4 - bell peppers (mix of colors) seeded, sliced
- 4 - small shallots sliced
- 2 tablespoons - olive oil
- 1 teaspoons - dried oregano
- 3/4 teaspoons - salt
- 1/4 teaspoons - crushed red pepper
- 1 pounds - hot Italian sausage links
- - quick-cooking polenta, grits or wild rice optional, for serving with
Directions:
Preheat oven to 450 degrees F.
On a foil-lined rimmed baking sheet, toss broccoli rabe with olive oil, oregano, salt and red pepper.
In a large bowl, toss bell peppers and shallots (or onion) with olive oil, oregano, salt and red pepper. Place onto a second foil-lined rimmed baking sheet, leaving space for sausage links; turn sausage links over and coat with a drizzle of oil.
Add both pans to pre-heated oven and roast for 20 minutes, tossing everything halfway through.
Meanwhile, prepare polenta, grits or wild rice as directed on package.
Slice sausage into coins and serve over polenta, grits or rice along with vegetables.
