Sheath Cake

Ingredients:

  1. 2 cups - flour
  2. 2 cups - sugar
  3. 1 sticks - margarine
  4. 4 tablespoons - cocoa
  5. 1/2 cups - Crisco shortening
  6. 1 cups - water
  7. 1/2 cups - buttermilk
  8. 1 teaspoons - baking soda
  9. 2 - eggs beaten
  10. 1 teaspoons - vanilla
  11. 1 sticks - margarine
  12. 4 tablespoons - cocoa powder
  13. 6 tablespoons - milk
  14. 1 boxes - powdered sugar sifted
  15. 1 teaspoons - vanilla
  16. 2 cups - pecans or coconut optional

Directions:

For Cake:

Sift together in a large mixing bowl the sugar and flour.

In a saucepan, mix together the margarine, cocoa powder, shortening, and water. Stir, cooking over medium heat, bringing to a rapid boil. Pour into bowl over the sugar and flour mixture, and stir together well.

Add the buttermilk, baking soda, eggs, and vanilla, stirring until well combined.

Pour into a greased and floured 11-by-16-inch baking pan. Bake for 30 minutes at 400 degrees F.

For Frosting:

About 5 minutes before cake is done baking, mix together in a saucepan the margarine, cocoa powder and milk. Cook over medium heat, stirring, until mixture comes to a boil.

Remove from heat and add in the powdered sugar, vanilla, and pecans or coconut (if using).

Beat well and spread over cake while still hot.
