Shaved Brussels Sprouts and Radicchio

Ingredients:

  1. 12 ounces - brussels sprouts (about 20) ends trimmed, tough outer leaves removed
  2. 1/2 heads - radicchio cored, cut in half
  3. 1/2 - Fuji apple cored, cubed
  4. 1 ounces - toasted Marcona almonds sliced
  5. 1/4 cups - shredded Manchego cheese
  6. 1/4 cups - extra-virgin olive oil
  7. 2 tablespoons - water
  8. 2 tablespoons - sherry or red wine vinegar
  9. 1 teaspoons - Dijon mustard
  10. 1 tablespoons - finely minced shallot
  11. 2 teaspoons - honey
  12. 1/4 teaspoons - salt
  13. 1/8 teaspoons - black pepper

Directions:

1. Whisk together all vinaigrette ingredients until well blended.

2. Using a mandoline or food processor with a slicing disk, shave the sprouts and radicchio.

3. Toss the sprouts and radicchio with the apple and dressing until evenly coated. Divide among plates, and top each with almonds and cheese.
