Shaffer Sweet Potato casserole

Ingredients:

  1. 8 whole - Sweet potatoes or yam peel and cube in one inch cubes
  2. 1 tablespoons - ground cinnamon
  3. 1/3 cups - brown sugar
  4. 1/3 cups - milk or almond milk
  5. 1/2 sticks - butter or equivalent
  6. - mini marshmallows enough to cover dish

  11. 1/2 sticks - butter or equivalent
  12. - mini marshmallows enough to cover dish

Directions:

Pre heat oven to 350. Peel and cube potatoes. Cover potatoes with water and boil for 20 min or until cubes mush. Mash potatoes. With mixer (or strong arm) beat in cinnamon, brown sugar, milk, butter. Pour into casserole dish. Cover (thickly) with mini marshmallows. Bake covered for 25 min. Remove cover and bake until marshmallows are toasted.
