Secret Garlic Mashed Potatoes

Ingredients:

  1. 5 pounds - unpeeled red potatoes quartered
  2. 1 1/2 cups - butter (not margarine) at room temperature
  3. 5 ounces - Romano cheese grated
  4. 1/4 cups - minced garlic about 7 medium cloves
  5. 2 1/2 teaspoons - dried oregano
  6. 1 teaspoons - salt or to taste

Directions:

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 20 minutes; drain well.

Stir in butter; then add cheese, garlic, and oregano. Mash with a potato masher (don't over-mash; leave some small chunks of potato in the mix when done).

Stir in salt, to taste.

If you prefer to use roasted garlic: Roast the garlic by slicing the top portion off a head of garlic and removing excess papery skin. Drizzle olive oil on top and season with salt. Wrap garlic tightly in foil and place in oven preheated at 375 degrees F for 35 minutes.
