Ingredients:
- 12 ounces - Fresh tilapia fillets or peeled/deveined shrimp
- 2 whole - Fresh jalapenos Sliced
- 1 packages - Tostada shells
- 2 cups - Shredded Pepper Jack cheese Divided use
- 1 cans - Black beans Drained & mashed
- 1 whole - Large, ripe avocado Sliced
- 1/4 cups - Fresh cilantro Chopped
- 3 whole - 3 to 4 Radishes, optional Sliced
- 1 whole - 1-2 Limes, for juice
- - Crumbled feta or goat cheese
Directions:
1. Heat oven to 400. Place tostada shells on a lrg. baking sheet.
2. Saute tilapia (or shrimp) in small amt. of oil w/ fresh jalapeno until fish just begins to flake or shrimp curl like the letter "C". Set aside.
3. Sprinkle half of shredded cheeese over tostadas; place in oven to melt cheese. In the meantime, combine mashed beans w/ remaining shredded cheese; spread over tostadas and return to oven for 5 min or until heated.
4. Remove fro oven and place fish or shrimp, avocado, cilantro and radishes (if using) over hot tostadas. Squeeze lime juice over all and serve while hot; add crumbled feta or goat cheese at this time.
