Seafood Stir Fry

Ingredients:

  1. 1 tablespoons - soy sauce
  2. 4 teaspoons - corn starch
  3. 1 1/2 teaspoons - olive oil or a little more
  4. 1 cups - water
  5. 1/2 teaspoons - salt
  6. 2 tablespoons - oil for cooking
  7. 1/2 pounds - medium shrimp peeled
  8. 1/2 pounds - scallops
  9. 1 cups - broccoli florets
  10. 1/2 cups - sliced carrots
  11. 1 cups - thinly sliced bell pepper
  12. 1 cups - diagonally sliced snow peas
  13. 1 cups - peeled, diced tomatoes
  14. - cooked rice for serving

Directions:

Mix together soy sauce, corn starch, olive oil, water and salt; set aside.

Heat work and add oil. Add shrimp and scallops; fry for 10 seconds. Remove; reserve.

Add broccoli and carrots; cook for 30 seconds. Add bell peppers, snow peas, and tomatoes and cook for 30 seconds.

Return all to wok. Add corn starch mixture and cook for 20 seconds.

Serve over rice.
