Ingredients:

  1. 2 teaspoons - oil
  2. 1/4 cups - chopped green pepper
  3. 1/4 - chopped celery
  4. 2 tablespoons - chopped onion
  5. 2 cups - diced tomatoes OR 1 cup tomato sauce
  6. 2 teaspoons - chopped fresh basil OR 1/2 tsp. dried basil
  7. 2 cups - cooked halibut or other cooked fish (tuna) cut into chunks
  8. - cooked baked potatoes for serving with

Directions:

In a large heavy skillet, heat the oil. Add pepper, celery and onion, and saute lightly while stirring for 5 minutes.

Add tomatoes or sauce and basil, and cook for another 5 minutes.

Add fish chunks, stir to blend ingredients and cook for another 5 minutes.

Makes about 2-1/2 cups. Serve on top of fluffy baked potatoes.
