Ingredients:
- 1 cups - (4 oz.) diced Canadian bacon
- 1/4 cups - chopped green onion tops and all
- 3 tablespoons - butter
- 12 - eggs beaten
- 1 cans - (3 oz.) mushroom pieces
- 1 - recipe cheese sauce (below)
- 4 teaspoons - butter melted
- 2 1/2 cups - bread crumbs (about 3 slices of bread)
- 1/2 teaspoons - paprika
- 2 tablespoons - butter
- 2 tablespoons - flour
- 1/2 teaspoons - salt
- 1/8 teaspoons - pepper
- 2 cups - milk
- 1 cups - shredded American cheese
Directions:
Cook bacon and onion in butter until onion is tender, but not brown. Add eggs and scramble just until set.
Fold mushrooms and eggs into prepared cheese sauce. Put in 12-x-7-x-2-inch baking dish.
Sprinkle with combined butter, bread crumbs and paprika. Cover.
Chill until 30 minutes before baking. Bake, uncovered, for 30 minutes in oven set to 350 degrees F.
