Scampi with Pasta

Ingredients:

  1. 1 1/2 pounds - shrimp peeled, deveined
  2. 3 tablespoons - butter or margarine
  3. 3 cloves - large garlic minced
  4. 1/2 cups - minced onion
  5. 1/4 cups - dry white wine
  6. 1/2 cups - tomato sauce
  7. 1 1/4 cups - whipping cream
  8. 1/2 teaspoons - dried basil
  9. 1/2 teaspoons - dried oregano
  10. 1 teaspoons - salt
  11. 1/8 teaspoons - white pepper
  12. 3 - egg yolks
  13. 12 ounces - dry vermicelli
  14. 2 tablespoons - parsley

Directions:

Rinse shrimp.

Melt butter in large skillet; saute garlic over medium heat, stirring constantly for 1 minute. Add shrimp and onion and saute over medium-high heat until shrimp is bright pink on both sides, about 5 minutes.

Add wine, tomato sauce, 1 cup of cream, basil, oregano, salt and pepper; heat through.

Beat egg yolks with remaining 1/4 cup cream. Add to sauce over medium heat and stir constantly until sauce thickens. Do not boil.

Meanwhile, cook vermicelli for 8 to 10 minutes; drain.

Arrange vermicelli on heated platter; pour sauce over pasta. Sprinkle with parsley.
