Ingredients:

  1. 2 - shallots minced
  2. - butter for cooking
  3. 3 - green peppers diced
  4. 4 - red peppers diced
  5. 2 cups - fresh basil leaves loosely packed
  6. 3/4 pounds - prosciutto thinly sliced and chopped
  7. 3 cups - whipping cream
  8. 1 pounds - fettuccine cooked al dente, well-drained
  9. 2 pounds - bay scallops
  10. 3/4 pounds - shredded cheese

Directions:

In a large skillet, saute shallots until soft.

Add peppers, basil and prosciutto; saute 5 minutes. Add cream and simmer until slightly reduced.

Remove pan from heat; add cooked, well-drained pasta, scallops and cheese.

Pour into casserole dish. Bake in preheated 350 degree F oven for 30 minutes.
