Ingredients:
- 2 - shallots minced
- - butter for cooking
- 3 - green peppers diced
- 4 - red peppers diced
- 2 cups - fresh basil leaves loosely packed
- 3/4 pounds - prosciutto thinly sliced and chopped
- 3 cups - whipping cream
- 1 pounds - fettuccine cooked al dente, well-drained
- 2 pounds - bay scallops
- 3/4 pounds - shredded cheese
Directions:
In a large skillet, saute shallots until soft.
Add peppers, basil and prosciutto; saute 5 minutes. Add cream and simmer until slightly reduced.
Remove pan from heat; add cooked, well-drained pasta, scallops and cheese.
Pour into casserole dish. Bake in preheated 350 degree F oven for 30 minutes.
