Ingredients:
- 3/4 pounds - bay scallops
- 1 cups - fresh lime juice
- 2 tablespoons - chopped green onions
- 1/2 - green pepper diced
- 1 - tomato diced
- 1 - avocado cubed (optional)
- - leaf lettuce for serving with
- 1 cups - olive oil
- 1/3 cups - wine vinegar
- 1 tablespoons - Dijon mustard
- - salt and pepper to taste
Directions:
Marinate scallops in lime juice for 6 hours or overnight until they have lost their translucency. Drain; save 2 tablespoons juice.
Mix scallops with green pepper, tomato, onion and avocado and 2 tablespoons juice.
Whisk together all vinaigrette ingredients. Add salt and pepper to taste.
Dress scallops with vinaigrette. Chill until just before serving.
Line a salad bowl or plates with lettuce. Spoon on the salad.
