Savoy Cabbage with Butternut Squash

Ingredients:

  1. 1 quarts - savoy cabbage chopped
  2. 3 cups - butternut squash medium diced
  3. 1 cups - onions diced
  4. 4 slices - bacon
  5. 1 tablespoons - red wine vinegar
  6. 1 teaspoons - sugar
  7. 4 tablespoons - extra virgin olive oil
  8. - salt and pepper to taste

Directions:

In a large saute pan, add oil and bacon; cook until bacon is lightly crispy and add onions. Saute for a few minutes until onions are soft.

Add quash and cabbage and saute until they are all tender. Add remaining ingredients and season with salt and pepper.
