Savory Vegetable Mini-Quiches

  1. 1 packages - refrigerated pie crust or puff pastry
  2. 1 cups - zucchini grated or finely chopped
  3. 1/2 cups - fresh mushrooms finely chopped
  4. 1/4 cups - cooked bacon or bacon bits
  5. 1 cloves - garlic minced finely
  6. 1/4 cups - green onions or chopped onion
  7. 1/2 cups - milk
  8. 2 whole - eggs
  9. 1/2 cups - cheddar cheese grated


Preheat oven to 375. On lightly floured surface, roll one pie crust into 12x10-inch rectangle and cut 12 circles from dough using 2-1/2" biscuit cutter. Press circles into mini-muffin pans using a tart shaper. Repeat with remaining pie crust (or puff pastry dough).

Whisk milk and eggs together in large bowl. Stir in vegetables and remaining ingredients. Fill each muffin cup with approximately 1 tablespoon filling.
Bake 15-18 minutes or until puffed and lightly browned. Cool in pan 2 minutes; remove carefully. Serve warm.
