Savory Salmon

Ingredients:

  1. 12 ounces - salmon pated dry
  2. 2 tablespoons - olive oil
  3. 2 cloves - garlic chopped
  4. 1 - medium onion chopped
  5. 3 tablespoons - capers drained
  6. 3 tablespoons - parsley chopped
  7. 1 pints - grape tomatoes
  8. - salt and pepper to taste
  9. - a dash of Allspice

Directions:

Heat grill to 400 degrees.

Combine in small bowl the olive oil, garlic, onion, capers, parsley, tomatoes, salt, pepper and allspice.

Lightly oil cast iron or other heat proof skillet. Arrange salmon in middle of pan.

Pour aromatics around salmon and grill until flaky. Cooking time will vary depending on size of fillet.

Recipe works well with other seafood, chicken or bone-in pork chops. May also be prepared in hot oven.
