Savory Caprese Bread

Ingredients:

  1. 1 1/4 cups - all-purpose flour
  2. 1 cups - bread flour
  3. 2 teaspoons - baking powder
  4. 1/2 teaspoons - baking soda
  5. 1 1/4 teaspoons - salt
  6. 3 1/2 ounces - to 4 oz. cubed, fresh mozzarella cheese
  7. 2 tablespoons - chopped fresh basil
  8. 1/3 cups - chopped sun-dried tomatoes (not packed)
  9. 2 1/2 tablespoons - grapeseed oil OR extra virgin olive oil
  10. 1 1/4 cups - buttermilk
  11. 2 - eggs

Directions:

Preheat oven to 350 degrees F and grease bread pan.

Combine flour, baking powder, baking soda, and salt. Mix well.

Add basil, mozzarella, and sun-dried tomatoes to the flour and mix until incorporated.

In separate bowl, whisk together eggs, oil and buttermilk.

Pour liquids into flour mixture and mix with a wooden spoon until well combined.

Spread evenly in pan and bake for 40-45 minutes.
