Sauteed Scallops with Honey Brown Butter Sauce

  1. 20 pieces - sea scallops
  2. 3 tablespoons - butter
  3. 1/4 cups - extra virgin olive oil
  4. 2 tablespoons - lemon juice
  5. 1 tablespoons - honey
  6. 2 tablespoons - chopped chives
  7. 1 tablespoons - chopped parsley
  8. 1 tablespoons - shallots
  9. - salt and pepper to taste


In a medium saute pan, add half of the olive oil and sear scallops about a minute on each side.

Remove scallops and place on plate.

Use the same pan with all the scallop drippings and add butter and let it brown. Add honey, lemon juice, and 2 tablespoons extra virgin olive oil.

Season with salt and pepper to taste. Add herbs and add diminished sauce to scallops.
