Sautéed Curried Cabbage

Ingredients:

  1. 1 tablespoons - coconut oil
  2. 1/2 teaspoons - yellow mustard seeds
  3. 1/3 cups - chopped onion
  4. 1/2 - large seeded and minced jalapeño
  5. 4 1/2 cups - shredded cabbage
  6. 1/2 teaspoons - curry powder
  7. - salt to taste

Directions:

Heat coconut oil in a non-stick sauté pan over medium-high heat. Add yellow mustard seeds and cook just until they begin to make popping sounds.

Add onion and jalapeno and sauté until onion is translucent.

Add cabbage and curry powder. Stir-fry for about 2 minutes.

Cover and cook over medium heat for 5-8 minutes, stirring occasionally, until cabbage is tender. Season with salt to taste.
