Sausage Cheddar Quiche

Ingredients:

  1. 2 - pastry for 9-inch quiche dish or pie pan
  2. 1 pounds - hot bulk pork sausage
  3. 4 ounces - canned sliced mushrooms drained
  4. 1/2 cups - chopped onion
  5. 1/4 cups - chopped green pepper
  6. 2 - eggs
  7. 1 teaspoons - minced parsley
  8. 1/2 teaspoons - whole basil leaves
  9. 1 dashes - granulated garlic
  10. 1/2 teaspoons - salt
  11. 3/4 pounds - grated cheddar cheese
  12. 1 cups - milk
  13. - paprika

Directions:

Line pans with pastry. Place a piece of buttered aluminum foil, buttered side down, over the pastry. Press foil into the pastry shell. (This keeps side of shell from collapsing). Cover foil with a layer of dry peas.

Bake at 400 degrees F for 10 minutes. Remove pans and foil; prick shell with a fork, and bake another 3 to 5 minutes or until lightly browned. Cool.

Cook sausage and drain. Combine sausage and all seasonings. Divide equally into the two pie shells. Top each with cheese.

Combine milk and eggs; beat until foamy. Pour half of mixture into each shell. Sprinkle with paprika.

Bake at 325 degrees F for 50 minutes or until cheese is lightly browned and quiche is set.
