Ingredients:
- 3 whole - sausages (we use jalapeno chicken sausages from Trader Joes, but any savory and/or spicy sausage wil
- 3 whole - sweet potatoes (should be 3 small or 2 medium sized sweet potatoes)
- 4 whole - eggs
- 2 whole - garlic cloves we used pre-minced garlic to speed up the prep time
- 2 dashes - cumin
- 1 pinchs - cayenne pepper
- 1 dashes - oregano
- - salt and pepper to taste
- 1 1/2 tablespoons - olive oil
Directions:
Boil water. Cut the sweet potato into small cubes. Once the water is boiling, add the sweet potato and cook until the potatoes can be easily speared with a fork but are not too soft.
While the sweet potato is cooking, cut the sausages into similarly sized cubes. If sausage is uncooked, beginning cooking the sausage on medium-high heat. If the sausage is already cooked, set aside.
Dice onion. Add onion, oil, garlic, and spices to a large skillet, and cook on medium heat until the onions are translucent. Once the sweet potato is done, drain and add the sweet potato to the sausage to the skillet and turn to high heat. Cook until the sausage, sweet potato, and onion are browned to your taste.
Meanwhile, fry the eggs in olive oil or butter. Once the hash is done, put the eggs on top of the hash and serve. We usually split the hash into two portions and put two eggs on each hash portion.
