Ingredients:
- 2 1/4 cups - water
- 8 - small red potatoes quartered
- 10 ounces - frozen peas and carrots
- 1 1/2 cups - quick cook brown rice
- 16 ounces - smoked sausage sliced
- 1/2 - small onion diced
- 1/2 - small red bell pepper diced
- 1/2 teaspoons - garlic powder
- 1 1/2 teaspoons - chili powder
- 1 teaspoons - cumin
- 2 - scallions or green onions sliced, optional
- 2 tablespoons - fresh parsley finely chopped, optional, for garnish
Directions:
In a large skillet over medium-high heat, cook the potatoes in the water for 7 minutes.
Stir in the rice, sausage, onion, bell pepper, garlic and chili powder and cumin.
Bring to a boil and then reduce heat to a simmer; cover and cook for about 10 minute or until rice is tender.
Top with scallions and parsley, if desired, and serve!
