Sausage and Dirty Rice Skillet

Ingredients:

  1. 2 1/4 cups - water
  2. 8 - small red potatoes quartered
  3. 10 ounces - frozen peas and carrots
  4. 1 1/2 cups - quick cook brown rice
  5. 16 ounces - smoked sausage sliced
  6. 1/2 - small onion diced
  7. 1/2 - small red bell pepper diced
  8. 1/2 teaspoons - garlic powder
  9. 1 1/2 teaspoons - chili powder
  10. 1 teaspoons - cumin
  11. 2 - scallions or green onions sliced, optional
  12. 2 tablespoons - fresh parsley finely chopped, optional, for garnish

Directions:

In a large skillet over medium-high heat, cook the potatoes in the water for 7 minutes.

Stir in the rice, sausage, onion, bell pepper, garlic and chili powder and cumin.

Bring to a boil and then reduce heat to a simmer; cover and cook for about 10 minute or until rice is tender.

Top with scallions and parsley, if desired, and serve!
