Sausage and Apple Stuffing

Ingredients:

  1. 1 pounds - hot sausage
  2. 1 - small Granny Smith apple peeled, cored, and diced
  3. 1/2 teaspoons - black pepper
  4. 1/2 teaspoons - dried thyme
  5. 5 tablespoons - margarine or butter
  6. 2 stalks - celery OR 1/2 teaspoon celery salt
  7. 1 - onion diced
  8. 2 - carrots peeled, shredded
  9. 14 1/2 ounces - chicken broth
  10. 1/2 cups - loosely packed fresh parsley leaves OR 1 teaspoon dried parsley
  11. 16 ounces - cornbread dressing mix (seasoned)

Directions:

Preheat oven to 325 degrees F. Brown sausage and drain; add apples, pepper and thyme and cook for 5 minutes longer, stirring occasionally and scraping up browned bits.

Spoon sausage mixture and any drippings into a large bowl; set aside.

In same skillet, melt margarine or butter over medium-high heat. Add celery (or celery salt) and onion, and cook 10 minutes until lightly browned, stirring occasionally. Add carrot and cook 5 minutes longer.

Stir in chicken broth, parsley and 1/4 cup water; heat to boiling. Spoon vegetable mixture and dressing mix into bowl with sausage mixture, and toss to mix well.

Spoon stuffing mixture into 13-x-9-inch baking pan, cover with foil, and bake for 45 minutes or until heated through.
