Salsa Bites

  1. 11 ounces - cream cheese
  2. 1/3 cups - thick and chunky salsa
  3. 2 - eggs
  4. 1/2 cups - cheddar cheese
  5. 2 tablespoons - ripe pitted olives
  6. 1 tablespoons - green onion
  7. 1 cloves - garlic
  8. 1/4 cups - sour cream
  9. 2 tablespoons - fresh cilantro


Preheat oven to 350. Whisk cream cheese in bowl until smooth. Whisk in salsa and eggs until well blended. Stir in cheese. Stir olives, green onion, and garlic into cream cheese mixture. Generously grease mini-muffin pan with vegetable spray. Fill muffin cups with mixture. Bake 15-18 minutes or until center is set. Let cool in pan 5 minutes. Remove and cool on wire rack. Spread tops with small amount of sour cream. Sprinkle chopped cilantro over sour cream.
