Salmon with Cucumber Sauce

  1. 1 pounds - salmon filets cut into 4 pieces
  2. 2 teaspoons - ground cumin
  3. 1/2 teaspoons - paprika
  4. pinchs - red pepper
  5. 1 1/2 cups - plain lowfat yogurt to make yogurt cheese
  6. 1/2 tablespoons - diced cucumber
  7. 1 tablespoons - chopped dill
  8. 1 teaspoons - minced garlic
  9. 1/4 teaspoons - salt


To make yogurt cheese for cucumber sauce:
Set a medium strainer over a bowl, line with a coffee filter or 2 paper towels, and add yogurt. Cover with plastic wrap and refrigerate at least 4 hours. Scrape into a bowl and refrigerate until ready to use.

Mix together cumin, paprika, and red pepper; spread as rub over salmon fillets. Bake for 10 minutes.

Mix remaining ingredients together and pour over fish.
